How’s everyone holding up? We’re truly in unchartered territory with the COVID-19 pandemic (I mean, how many people remember the Spanish Flu?), and each of us is bound to be affected in different ways, economic, emotional, and otherwise.

Being that so many of us have more time than usual to get lost in social media, I’ve put together a(nother) list of IG accounts worth following in the era of corona, classified by what you’re hungry for in any given moment. Need some info? I got you covered. Want a fashion escape? Gotcha too. Need to quell your anxiety? Check the list, what you’re looking for is there. Want to see pictures of a chihuahua wearing Fendi? You know I am your down to ride.

HOW HOW-TO: Salad making. Y’all are so eager for a little quarantine cooking guide, so here’s a quick guide for the basics of simple salad making. It’s all about balancing texture and flavors. My salads always need: . ⁃3 vegetable/fruit elements ⁃crunch ⁃fresh herbs ⁃something sweet (sweet is usually honey in the dressing for me!) ⁃vinaigrette (acid & oil) ⁃The lettuces here are slightly bitter, so to counteract, I added fresh pear. It’s a perfect balance to the bitter, savory greens and radicchio. The dressing is made with whole grain mustard, olive oil, champagne vinegar, and honey. Fresh cracked pepper pairs well with the bitter radicchio, and pecorino romano ties it all together. Using this as a general guideline is so helpful for making a flavorful salad— add a protein and you’re golden. To make this salad: Frisée, pear, radicchio, dill, pecorino Romano, and a dressing of whole grain mustard, honey, champagne vin and evoo. 👩🏻‍🍳🤘🏻

At the top of the comfort food list around here: @huckcafe’s Homemade English Muffins. There is a fresh batch quickly disappearing from my counter and I thought you might like them, too. I am reposting my own #PretendCookingShow (is that even allowed?) I was thinner then, but am happier now. 😊 (Quarantine note: if your pantry looks sketchy— milk with vinegar/lemon juice = buttermilk. And All-Purpose flour works A-OK here.) XXX P.S. why the obsession with protecting yeast? I’m so sorry. 🙈♥️ . Huckleberry Cafe’s English Muffins recipe (by @zoenathanloeb): 3 cups buttermilk 2 Tbsp active dry yeast 3 Tbsp unsalted butter 3 Tbsp honey 6 cups bread flour 1/4 cup sugar 4 1/2 tsp kosher salt 1 cup cornmeal . 1. Warm 1 1/2 cups buttermilk in saucepan, but do not boil. Place remaining 1 1/2 cups cold buttermilk in bowl of stand mixer with yeast and whisk to combine. Add warm buttermilk to cold buttermilk mixture and whisk to blend. Add butter, honey, bread flour, sugar, and salt and mix on low speed with dough hook for 1 min, until dough comes together. Increase speed to med-high and work dough for about 2 mins until smooth. . 2. Transfer dough to greased bowl, cover with plastic wrap, refrigerate for 1 hour. . 3. Sprinkle 1/2 cup of cornmeal on a clean work surface and dump dough onto it. Sprinkle 1/4 cup of cornmeal on top of dough and flatten into a disk with 1 inch thickness. . 4. Sprinkle last 1/4 cup cornmeal onto a sheet pan. Cut English muffins from the dough with 3 inch round cutter. Cut them as closely as possible, minimizing the amount of scraps — you cannot combine and reroll this dough. 😬 . 5. Arrange muffins, 1 inch apart, on sheet pan. Allow to rise for 1 hour at room temperature, or refrigerate overnight and allow to rise for 1 hour in the AM. 🙋🏻‍♀️ . 6. Preheat oven to 350°F. When oven is hot, heat ungreased griddle or large cast-iron pan over med-high heat. Jen tip: 275°F for the temperature of your griddle! . 7. Drop muffins onto griddle for about 1 minute on each side, until golden brown. . 8. Return muffins to sheet pan and immediately bake for 8-10 minutes (I find closer to 12 mins for me! 🤷🏻‍♀️), until they feel light. . 9. Yum! So yum.

Minimizing each other’s experience of this pandemic is not going to be helpful in restoring the human spirit. No matter how insignificant you feel the loss of something is, it’s still a loss to the person going through it. Let’s look for ways to validate each other’s negative emotions without judgment or criticism and offer the space to be able to feel badly without guilt. Humans are incredibly resilient and yet fragile in times of fear so turning towards each other with dialed up compassion will help us all see this thing through. How you feel is important no matter what anyone says don’t suppress your feelings but find healthy people to help you process them. Twitter creds: @jasmoneyrecords & @matisseminyon . . . I’m opening up my calendar to help as many as possible and while I’m an out of network provider with all insurance companies many of my clients receive 100% reimbursement including Canada. From what I’m reading the insurance companies are trying to modify policies to allow access for more people and I encourage you to reach out to them for help. She may have started in PT, but this account (also known as Mulheres Bem Resolvidas) is a treasure trove for research-based, woman-centered sexual health and relationship content.
